Fujio Shido

was a renowned chef who played an important role in introducing French cuisine to Japan. He is widely held by the Japanese as Japan's pioneer of French Cuisine.
In 1927, Shido began studying French cuisine at Le Cordon Bleu Paris. After World War II, Shido returned to Japan and became the Chef de Cuisine for Prime Minister Shigeru Yoshida.
He once held a position in the Japanese Embassy in London. After his duty had passed, he went on to cook. Shido has had experience in London, Paris, Ginza, and Kobe. He also made a reputation for himself as a chef in restaurants such as Hananoki and Four Seasons.
Shido was Iron Chef French Hiroyuki Sakai's mentor for three years.
